    ✨르방으로만 만든 사워도우 바게트✨ T65로만 할 땐 기공이 안나왔는데, 중력분을 섞고 최대한 성형을 조심해서 했더니 드디어 기공을 볼 수 있었습니다. 반죽이 많이 질어서 성형이 어려워서 다음에 만들 때는 물 양을 좀 줄여보려고요! 미니 오븐이라 모양이 찌그러졌는데, 미니 오븐 사용할 땐 3등분 해서 3개로 만드는 게 좋을 것 같습니다 : ) [재료] 중력분: 165g T65: 88g 물: 181g 소금: 5g 스타터: 60g 1. 물에 스타터 넣고 밀가루 넣고 30분 오토리즈 2. 30분 후 소금넣고 소금이 섞일 때까지 반죽 3. 30분 간격으로 4회 폴딩 4. 실온 2시간 발효 5. 덧가루 뿌리고 가성형하고 30분 쉬기(오븐 230도 예열 시작) 6. 바게트 모양으로 성형 후 2차 발효(눌렀을 때 살짝 자국이 남을 때까지 30분-1시간) 7. 스코어링(쿠프내기)하고 테프론 시트 덮어서 230도 오븐에 넣고 물을 분무기로 4-5회 빠르게 분사 5분 뒤 테프론시트 제거 후 10-15분 굽기

      usa measurements (I'm assuming you mean cups and spoons) are usually too inaccurate for bread baking, a change of flour to water ratio can be significant in terms of how it would turn out, so generally it is recommended to use grams and Baker's percentages. Its not algebra, its pretty simple but I get it, it can be a big leap for beginners

    Thanks, but this quantity of flour makes 6 croissants and not just 3, it’s not worthy to spend all this time and waste all the ingredients “mainly the butter” and make just three croissants and hear you eating and chewing in a disgusting way… sorry but that the truth!

      Adding after some thought. Vegetable oils diminish the load volume if used above about 3% and this bread already has poor loaf volume because of the poor gluten quality in Durum flour. You might consider halving the amount of olive oil (5%). I think you will find you get a better loaf volume.
